More tried and true faves this week! 

NEXT WEEK'S MEAL PLAN:
Monday:
Pizza with Portabello Mushrooms, Basil and Gorgonzola Crumbles - I use a store-bought crust, spread 1-2 tbsps of olive oil over it, then sprinkle with mozzarella, top with sliced portabellos and gorgonzola crumbles. Cook at 450 for 15 minutes. When the pizza comes out of the oven, I add some shredded fresh basil leaves and drizzle balsamic glaze (from Trader Joe's) over the top.

Tuesday:
Caramelized Shallot, Spinach and Goat Cheese Pasta

Garlic Bread

Wednesday: 
Grilled Hawaiian Teriyaki Burgers
Sweet Potato Fries

Thursday:
Leftovers

Friday:
Loaded Potato and Chicken Casserole

Saturday/Sunday:
Leftovers/Eat Out

Monday:
Easy Pad Thai (from Budget Bytes cookbook)
Dumplings from Trader Joe's

Lunches:
Sandwiches/Leftovers

Other:
Whole Wheat Irish Soda Bread Muffins (Happy St. Patrick's Day!)

And...

HITS FROM THIS WEEK:

We loved both the Easy Sesame Chicken (REALLY easy and tasty!) and the Loaded Potato and Chicken Casserole was obviously a hit from the week before because I am making it again! The pasta I am making today (Pasta with Italian Chicken Sausage, Peppers and Escarole) is also a favorite here. Eric loves it.
