What We Are Eating

In easy (lazy) mode for next week. Rehearsals at work and doctors appointments will make next week a busy one.

NEXT WEEK'S MEAL PLAN:
Monday:
Spicy Chicken Sausage Pasta and Greens

Tuesday:
Leftovers/Eat Out

Wednesday:
Easy Sesame Chicken - doubling the recipe because we like it so much, using chicken breasts instead of thighs (because fatty chicken thighs gross me out).
Fried Rice

Thursday:
Grilled Hawaiian Teriyaki Burgers (from freezer)
Sweet Potato Fries - store-bought (we like the Alexia brand).

Friday:
Bacon and Pea Mac and Cheese - if Lila doesn't eat this, then I give up.

Saturday/Sunday:
Leftovers/Eat Out

Monday:
Easy Baked Paleo Chicken Tenders
Baked Potatoes w/Broccoli

Lunches:
Sandwiches, Salads, Leftovers.

Lila:
Ground Beef with Taco Seasoning for Nachos

And...

HITS FROM THIS WEEK:
The Bow Tie Pasta with Peas and Ham was a yummy and easy weeknight meal. The Budget Bytes Pad Thai was good, but I think I prefer the Pioneer Woman's Simple Sesame Noodles recipe, which is a very similar dish. And the Slow Cooker Sweet Pork Barbacoa Tacos were delicious - we have a bunch of the barbacoa left over so that will make for good leftovers for the rest of the week. I made the mistake of ordering a 10 lb pork shoulder last week for a very reasonable price, that I figured I could cut up and freeze what I wasn't going to use for the tacos. Oh my gosh, it showed up basically un-butchered. Like, with the thick pig skin still on it. SO GROSS. Thankfully, Eric butchered it for me - it took an hour and a half to separate the meat! Gah, never again. 

And if you are wondering, Lila ate none of the above. Toddlers, man. Feeding them is THE WORST.
