What We Are Eating

I mostly wanted to stick with tried-and-true recipes next week so that meal prep would be a no brainer. The only exception to this is the Sesame Chicken planned for Tuesday - but it gets great reviews from my meal planning group ladies, so I have high hopes for it. 

Also, just for your information, we don't really have any dietary restrictions in our family. Eric is allergic to pecans and walnuts, but otherwise we have no other allergies among us. I am currently 26 weeks pregnant, so I am basically eating whatever I want - haha! I will probably scale back on some of the more caloric dishes later this year when I am looking to get back into shape, but for now - anything goes! 

So, here's what I have planned.

NEXT WEEK'S MEAL PLAN:
Monday:
Tacos - cook up some ground beef with taco seasoning, serve in crunchy taco shells with shredded cheese, shredded lettuce, tomatoes, scallions and sour cream (make nacho version for Lila)

Tuesday:
Easy Sesame Chicken
Rice
Steamed Broccoli

Wednesday:
Breaded Pork Cutlets
Mashed Potatoes
Roasted Asparagus

Thursday:
Pasta with Italian Chicken Sausage, Peppers and Escarole (the grocery store hasn't had escarole lately so I'm going to make this with baby spinach instead)

Friday-Sunday
Leftovers/Eat Out

Monday:
Pizza with Portabello Mushrooms, Basil and Gorgonzola Crumbles - I use a store-bought crust, spread 1-2 tbsps of olive oil over it, then sprinkle with mozzarella, top with sliced portabellos and gorgonzola crumbles. Cook at 450 for 15 minutes. When the pizza comes out of the oven, I add some shredded fresh basil leaves and drizzle balsamic glaze (from Trader Joe's) over the top.

Lunches:
Cheesy Spinach Quiche

Lila:
Make a half batch of Mac and Cheese.

And...

HITS FROM THIS WEEK:

Baked BBQ Chicken  - Easy and SO good.

Mexican Casserole with Roasted Corn and Peppers - Even Eric liked this despite the fact that it is vegetarian! He did comment that it would be great with pork - ha!

Cheesy Spinach Quiche - This was so good, I'm making it again next week. I will probably use half as much spinach - it turned out a little dense. Also, I mixed all the ingredients up rather that layering them. I prefer my quiche filling that way.

I didn't end up making the Pad Thai on Monday because we still had leftovers from last week. And I have not yet made the Loaded Potato and Chicken Casserole, but I am looking forward to it!
