What We Are Eating

Man, the weeks are flying by. I am trying to keep the meal plans fairly simple over the next few weeks so that I can also fit in freezer meal prep without feeling like I am ALWAYS in the kitchen. So here's what I have planned for next week:

NEXT WEEK'S MEAL PLAN:

Monday:
Leftovers/Eat Out (I have rehearsal all day)

Tuesday:
Bacon Fried Rice (hoping Lila will eat this)
Trader Joe's Potstickers

Wednesday:
Grilled Turkey Meatball Subs (will make Lila try the meatballs)

Thursday:
Pulled BBQ Pork Sandwiches (using this recipe for the pork)
Baked Potatoes
Coleslaw

Friday:
Asparagus Spinach Pesto Pasta with Blackened Shrimp
Garlic Bread

Saturday/Sunday:
Leftovers/Eat Out

Monday:
Store-bought Pizza Crust with Mozzarella, Gorgonzola Crumbles, Portabello Mushrooms. (Cook at 450 for 15 minutes, then add some fresh basil and Trader Joe's Balsamic Glaze).

Lila:
Weelicious Orzo

Freezer Meal Prep:
Green Chile Turkey Burgers
Grilled Hawaiian Teriyaki Burgers

And...

HITS FROM THIS WEEK:
So far the Shrimp, Corn and Pepper Quesadillas were delicious - even Lila ate them (sans shrimp)! I would add more lime juice to the Cilantro Lime Rice next time, but that was good, too. And the Crispy Smashed Potatoes? YUM.
