What We Are Eating

Eh, its been kind of a lame week when it comes to food. Lila is boycotting most meals these days and Eric had a stomach bug, so food was put on hold for a few days because of that. Hopefully next week will be better. Here's what I have planned:

NEXT WEEK'S MEAL PLAN:
Monday:
Easy Baked Paleo Chicken Tenders
Baked Potatoes w/Broccoli

Tuesday:
Spicy Chicken Sausage Pasta and Greens (I never got around to making this dish this past week)

Wednesday:
Eric is working, so I am going the easy route with:
Store-bought Stuffed Chicken Breast (we like the ones from Barber Foods)
Mashed Potatoes
Some sort of vegetable

Thursday:
Leftovers/Eat Out

Friday:
Shepherd's Pie (my mom's recipe - if anyone wants the recipe, let me know in the comments)

Saturday/Sunday:
Leftovers/Eat Out

Monday:
Slow Cooker Jambalaya

Lunches:
Quiche - Using broccoli and tomato rather than ham

Lila:
Angst and Air. Well, that, a fresh batch of Mac and Cheese, which she will probably boycott.

HOUSEKEEPING!
I finally got around to organizing my massive Pinterest "Food" board - I broke it down into separate boards for Appetizers, Breakfast, Drinks, Freezer Meals, Kid Food, Lowfat/WW, Mains, Lunch, Salads, Sauces/Dressings, Sides, Slow Cooker, Smoothies, Snacks, Sweet Things and Tips/Tricks/Good Ideas. So if you were following my old "Food" board, you might want to subscribe to some of the other boards for food ideas as well.

Also, my friend Rebecca gave me the awesome idea of keeping a list of what is in my freezer on top of the freezer...I inventoried everything this week and it makes life so much easier! No longer am I guessing about what is buried in there. Thanks for the tip, Rebecca!
