What We Are Eating

My energy level suddenly hit a wall the other day. There is still a lot that has to be done before the little dude arrives, so I am trying to be smart about where I am focusing the energy I do have...and frankly it is not on making dinner every night! There is still a bunch of freezer meal prep I want to do, so I have made a very simple meal plan for next week so I can spend the majority of Lila's nap times working on freezer meals and washing baby things rather than making dinner. One week of work left! Maternity leave cannot come soon enough.

So, here's the plan...

NEXT WEEK'S MEAL PLAN:

Monday:
Cajun Shrimp and Rice

Tuesday:
Chipotle Lime Shrimp Tacos with Strawberry Salsa
Chips and Salsa

Wednesday:
Buffalo Chicken Strips (going to use almond flour instead of Fiber One cereal because that's what I have on hand)
Baked Potato w/Broccoli

Thursday:
Leftovers/Eat Out

Friday:
Bow-ties with Peas and Ham
Garlic Bread

Saturday/Sunday:
Leftovers/Eat Out

Monday:
Store-bought Pizza Crust with Mozzarella, Gorgonzola Crumbles, Portabello Mushrooms. (Cook at 450 for 15 minutes, then add some fresh basil and Trader Joe's Balsamic Glaze).

Last week's plan was all tried-and-true favorites, so no new "hits" to write about... I have a craving for banana bread today so I think I'm going to give this recipe a try - I'll let you know how it turns out!
