What We Are Eating
Next week is a casserole kind of week. We are going into the city with Lila to get our taxes done on Wednesday so I needed an easy meal for that night, so enter baked chicken and potatoes. And I'm trying out a new quiche recipe for lunch - hope its as yummy as my usual!

Easy Pad Thai (from Budget Bytes cookbook)
Dumplings from Trader Joe's
Mexican Casserole with Roasted Corn and Peppers
(Marinate chicken overnight for tomorrow)
Baked BBQ Chicken
Tacos - cook up some ground beef with taco seasoning, serve in crunchy taco shells with shredded cheese, shredded lettuce, tomatoes, scallions and sour cream (make nacho version for Lila)
Cheesy Spinach Quiche
Chicken Broccoli Rice Casserole (from freezer)
HITS FROM THIS WEEK:
Cilantro Lime Pizza - this is so tasty and makes two pizzas which last for days!
Cajun Shrimp and Rice - I'm actually making this tomorrow, but its a favorite of ours - delicious, hearty, makes lots of leftovers, and fast and easy!
Tortilla and Black Bean Pie - I dare you to stop eating this after only one slice.
Strawberry Shortcake Muffins - This is my favorite muffin recipe - the main ingredients are oatmeal and greek yogurt! They freeze really well and Lila loves them, too.
