What We Are Eating
While looking for recipes this week I came across Tracy's recipe for Bacon and Pea Pizza and then sort of fell down a Shutterbean rabbit hole, looking at her recipe archives. So most of the meals I have planned this week are from her site. I'm working all day/night next Saturday, Sunday, and Monday so I am hoping leftovers tie us over through those days. I'm also hoping that a number of these recipes can be adapted into Lila-friendly meals...she is driving me nuts these days with her hunger strikes, particularly at dinner time. Finally, this week begins freezer meal prep! We are about 7 weeks out from the arrival of baby boy, so I am starting to stock up on meals for June and July now.
Okay, here's the plan:
NEXT WEEK'S MEAL PLAN:
Slow Cooker Jambalaya
Stuffed Chicken Breasts (store-bought, we like Barber brand)
Crispy Smashed Potatoes
(I think Lila will eat most of this meal, particularly if I cover her broccoli in cheese!)
Sweet Peas and Shells Alfredo (maybe Lila will eat this...depending on which way the wind is blowing?)
4 Quiches (2 tomato and broccoli, 1 ham, 1 mushroom and spinach)
HITS FROM THIS WEEK:
Everything has been good so far! The Paleo Chicken Tenders are a favorite around here. I can't wait until I can give them to Lila, but they are made with almond flour and we are supposed to wait until she is three to introduce her to any nuts because of allergies in the family. They are so tasty! The Spicy Chicken Sausage Pasta and Greens was good, too! I'm looking forward to leftovers tonight. I have to say that the Bacon and Pea Mac and Cheese from the week before was kind of a disappointment. The cheese clumped up and didn't really form a good sauce. A yummy meal in theory but not executed well. Bummer.
