What We Are Eating

I was almost going to forgo this post today, because it is such a phoned-in meal plan, but I thought it would show some good fast options of meals when you don't feel like cooking. Because, believe me, at this moment in time I do not feel like cooking at all. Prepping freezer meals is my priority in the kitchen right now, so all the dinners I have planned for next week are quick, easy ones that are mostly store-bought items. I start maternity leave next week, which is great, but also means I actually have to plan a dinner every night instead of counting on eating out a few times. 

Anyway, here's the plan.


Pizza with Basil, Portabellos and Gorgonzola - Store-bought Pizza Crust with Mozzarella, Gorgonzola Crumbles, Portabello Mushrooms. (Cook at 450 for 15 minutes, then add some fresh basil and Trader Joe's Balsamic Glaze).

Fajitas - (I just make the recipe on the back of the fajita spice packs at the grocery store, usually mixing the chicken and veggies together and adding a beer to the pan).

Hawaiian Teriyaki Burgers (from freezer, make sauce)
Sweet Potato Fries

Stuffed Chicken Breasts (store-bought)
Mashed Potatoes

Easy Fried Rice
Trader Joe's Potstickers

Paleo Chicken Tenders
Baked Potatoes with Broccoli and Cheese

Sunday: (Eric will grill)
Corn on the Cob

Ravioli with sauce (store-bought)
Garlic Bread

Freezer Meals:
Smoky Bacon Chili (double the recipe)
Cilantro Lime Pizza (2)
BBQ Chicken Pizza (2) - store-bought crust, slathered in BBQ sauce, topped with chicken, mozzarella, red onion, corn and chicken.



I crapped out on making a couple of this week's meals, but I did love the Chipotle Lime Shrimp Tacos with Strawberry Salsa. They were easy to prepare - I made the salsa and marinated the shrimp in the afternoon, and then that night, it only took about 10 minutes to cook up the shrimp and assemble the tacos. I love fruit salsa - the strawberry flavor was awesome. Also, I made that Banana Bread with Bourbon and it was so good! I only had one egg (the recipe calls for two), so it turned out a little bit cake-y, but it was so tasty!
